What Do I Need To Do To Throw Together Beef Fajita Tacos?
- Pre-heat your grill to medium heat.
- First, cut 2 lbs skirt steak into 1 inch strips
- Second, slice 2 medium red onions into thick strips
- Third, slice 1 large green pepper into thick strips
- Make the seasoning. In a bowl, add 2 ½ tsp cumin, 1 tsp chili powder, 1 tsp smoked paprika. Stir. Add the beef and coat with seasonings.
- On a baking sheet with aluminum foil, spread out the red onion, green pepper, and steak. Add ground pepper and salt to taste. Drizzle 2 tbsp olive oil over the top. Add the zest of 2 limes. Then, sprinkle the lime juice over the top.
- Place the foil (not the baking sheet) on the grill until the steak is cooked to medium, about 11 minutes.
- To add an extra plant point, build your taco on a whole wheat tortilla!
- Top with fresh arugula and Kait’s Cupboard smoky salsa!

- 2 lbs skirt steak cut into 1 inch strips
- 2 medium red onions washed, halved, and sliced into thick strips
- 1 large green bell pepper halved, washed, deseeded and sliced into thick strips
- 2 small limes zest and juice of
- 2 1/2 tsp ground cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- ground pepper to taste
- sea salt to taste
- 2 tbsp olive oil extra virgin
Toppings
- 5 oz baby arugula washed
- 12 tortillas whole wheat

Instructions
Preheat the grill
- Pre-heat your grill to medium heat.
Prep the Beef Fajitas
- Cut 2 lbs skirt steak into 1 inch strips.2 lbs skirt steak
