  • First, in a large bowl you mix together the wet ingredients. This includes, the Greek yogurt, whole grain mustard, raw honey, lemon, salt, and pepper.

The easiest way to make a chicken salad is if the chicken is already cooked. This keeps your salad prep to a bare minimum. This package of grilled chicken strips above is fantastic in a quick chicken salad, however, with inflation it has SIGNIFICANTLY increased in price. If that doesn’t matter to you, you can find the grilled precooked chicken here. Or, at your local Costco.

However, if you are looking to save money, try Aldi for their marinated chicken breasts (like cilantro lime) and bake or air fry them ahead of time. Then, you will have chicken at the ready for whatever the recipe!

With lemon, whole grain mustard, fresh kale, and cashews, this quick chicken salad includes lots of good for you ingredients that will leave you happily full without the bloat.

  • 1/2 cup Greek yogurt  whole milk
  • 4 tbsp whole grain mustard
  • 1 1/2 tbsp honey raw
  • 1 lemon zested and juiced
  • 1 tbsp Mediterranean sea salt
  • 3 tbsp Black pepper ground
  • 1 bunch kale chopped into small pieces
  • 2/3 cup salted cashews chopped roughly    
  • 1 lb grilled chicken strips or 2 packets of Tru Grilled 8 oz grilled chicken strips (find in Costco)

Instructions
 

  • In a large bowl, mix the wet ingredients and seasoning first.
  • Combine, the Greek yogurt, mustard, honey, lemon, salt, and pepper. Stir with a fork.
    1/2 cup Greek yogurt , 4 tbsp whole grain mustard, 1 1/2 tbsp honey, 1 lemon, 1 tbsp Mediterranean sea salt, 3 tbsp Black pepper
  • Add the grilled chicken. Stir breaking up the chicken pieces with a wooden spoon into bite sized pieces and making sure the sauce coats the chicken.
    1 lb grilled chicken strips
  • Add the kale. Stir with wooden spoon combining well.
    1 bunch kale
  • Add the cashews. Stir again until it is well combined. Enjoy!
    2/3 cup salted cashews

I like to serve it at room temperature, but you really could serve it warm or cold too. Serve with triscuits or your favorite crusty bread.
