The enzyme alliinase triggers a complex chemical process inside the cells of garlic and onion, leading to the production of allicin – an element that is credited with numerous health benefits. It’s this phenomenon that we can thank for the healthy benefit we gain when consuming garlic or onion.

Allicin is among the most remarkable and proficient defensive compounds of nature, with tremendous health perks. It stands out from other healing remedies due to its vast benefits.

Chop and Stop! Cut garlic and onions first and wait 10 minutes for the allicin to form.

Bulsiewicz, 2020, p. 161

Allowing a 10-minute waiting period to convert alliinase into allicin has been linked to numerous health benefits (2020).

It’s been established by medical doctors that including allicin in your diet can reduce cholesterol levels significantly. This research finding has repeatedly been backed up by various researchers such as Stevinson et al. (2000) and Silagy & Neil (1994).

Ried et al. (2013) conducted a ground-breaking medical study that concluded that regularly consuming garlic could reduce cholesterol levels by up to 8% for high cholesterol patients and further reduce the risk of heart disease.

Numerous research studies indicate that regularly eating antioxidant-rich foods can help prevent the onset of cataracts. Luckily, these types of foods are quite easy to find and incorporate into your diet (Karppi et al., 2012Delcourt et al., 2006Seddon et al., 1994). Enter – green peppers!
