Beef Fajita Tacos
  • 2 lbs skirt steak cut into 1 inch strips 
  • 2 medium red onions washed, halved, and sliced into thick strips
  • 1 large green bell pepper halved, washed, deseeded and sliced into thick strips
  • 2 small limes zest and juice of
  • 2 1/2 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ground pepper to taste
  • sea salt to taste
  • 2 tbsp olive oil extra virgin
Toppings
  • 5 oz baby arugula washed
  • 12 tortillas whole wheat

Instructions
 

Preheat the grill

  • Pre-heat your grill to medium heat.

Prep the Beef Fajitas

  • Cut 2 lbs skirt steak into 1 inch strips.

  • Slice red onions into thick strips.

  • Slice green pepper into thick strips.
    1 large green bell pepper
  • Make the seasoning
  • In a medium bowl, add cumin, chili powder, and smoked paprika. Stir. Add the beef and coat with seasonings. 
    2 1/2 tsp ground cumin, 1 tsp chili powder, 1 tsp smoked paprika
  • On a baking sheet covered with aluminum foil, spread out the red onion, green pepper, and steak.
  • Add ground pepper and salt to taste.

  • Drizzle 2 tbsp olive oil over the top.

  • Add the zest of 2 limes. Then, sprinkle the lime juice over the top.

Grill

  • Place the foil (not the baking sheet) on the grill until the steak is cooked to medium, about 11 minutes.

Serve!

  • Build your beef fajita tacos on a tortilla. To add an extra plant point, use whole wheat tortillas! Top with fresh arugula and Kait’s Cupboard smoky salsa!
