What Do I Need to Do to Throw Together the Best Baked Potato?

This meal is ideal for busy weeknights as you can prepare everything in advance. Simply prep the filling for the baked potato and store it in the fridge until you’re ready to stuff and bake it. Simplify your life by pre-baking the potatoes and storing them in your refrigerator. By completing steps one and two ahead of time, you can press the easy button and jump to step three. For specific details, click on each step below to learn more about achieving the best baked potato!

If you have a regular oven, preheat it to 375 degrees Fahrenheit. If you are using the GE Smart Oven, you do not need to preheat the oven. Bonus!!

You’ll want to wash the potatoes under the sink and then lightly prick them on the top and bottom with a fork. Then, take a baking sheet, cover it with aluminum foil and put the potatoes on it. Pour the olive oil over the potatoes and sprinkle with salt and pepper. This will give your baked potatoes a nice, crispy, crust when they are finished.

If you are using a regular oven, place potatoes in oven. Cook at 375 degrees Fahrenheit for 50-55 minutes.

If you are using the GE Smart oven, you are lucky!! Not only do you not have to preheat the oven, but you can use the precision cook function. There are lots of things you can cook with precision cook, and baked potatoes is one of them. We use this button literally ALL THE TIME. If you have GE precision cook, choose baked potatoes, the number of ounces, and press “next.” Then, put your sheet in the oven on the rack that the oven tells you to place it. Seriously, it really does take all the thinking out of it. And, press start. Voila! The oven will automatically program and display the amount of time you need to cook your potatoes, giving you the perfect baked potato!

Prep the baked potato stuffing either ahead of time or while the baked potatoes are cooking. First, add about 1 to 1.5 tablespoons of extra virgin olive oil to a skillet and turn the burner onto medium high.

Then, add your red onion and garlic and sauté stirring regularly for about four minutes. Then, add the garbanzo beans (otherwise known as chickpeas) and stir regularly for another five minutes. The onions should be softened and lightly golden and translucent. Add the fresh dill and thyme seasoning and stir to fold it into the beans. Remove from heat. You can either set this to the side for when the potatoes are finished, or if you are prepping ahead of time, just put in a sealed container and place in the fridge for when you are ready!

Once your potatoes are baked, sliced them down the middle and leave about one to one and a half inches on either side of the ends of the potato so you can pinch them lightly to pop them open in the middle. Top your potatoes with crumbled feta cheese. Or, if you’d like to keep your ultimate baked potato vegan, skip it!

  • 4 large russet potatoes
  • 1/4 cup olive oil extra virgin
  • 1.5 tbsp olive oil extra virgin
  • 1 large red onion thinly sliced
  • 3 cloves garlic roughly chopped
  • 14.5 oz garbanzo beans, canned drained and rinsed
  • 3 sprigs fresh dill
  • 8 sprigs fresh thyme do not include the stem
  • 1/4 cup feta cheese crumbled, optional
  • salt to taste and to season potatoes
  • ground pepper to taste and to season potatoes

Instructions
