What Do I Have To Do To Throw Together Refried Beans From Scratch?

  • First, add a pound of dried pinto beans to the Instant Pot.
  • Then, peel and cut an onion in half and add it to the pot. Add the garlic, salt, pepper, and seasonings.
  • Next, add the vegetable stock. Close the lid and press “beans.” Set the timer to 45 minutes and make sure the pressure valve is closed.
  • Allow to cook and go about your day!
  • Finally, when the timer goes off, open the vent to let out the steam.
  • Open the lid, remove the onion and throw it away. Remove the silver pot from the instant pot and drain the beans about half way. Place back in the Instant Pot.
  • Use an immersion blender to get that creamy – refried beans in a can – consistency.
  • Serve and enjoy!

Should you be using fresh garlic? Or, is it okay to buy minced garlic in a jar? If you’re like me and looking for short cuts, jarred minced garlic feels SO MUCH EASIER. It’s still kind of fresh, more fresh than garlic powder, it lasts longer than a fresh head of garlic, and it doesn’t have to be chopped. Meaning time saver.

Make ahead bean and cheese quesadillas and freeze them individually for lunches and dinners that are ready in 1 minute flat.

Mexican Refried Bean and Cheese Quesadillas

  • 1 bag of whole wheat tortillas 
  • 2 bags of shredded cheddar cheese
  • aluminum foil
  • Gallon sized ziplock bag

First, preheat the oven and prep your baking sheet

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Tear a piece of parchment paper or aluminum foil to cover a baking sheet. 
  3. Spray the foil with olive oil spray or spread a bit of olive oil on the foil. 
  4. Open the bag of tortilla shells. Take out one tortilla shell and lie open face on the baking sheet

Second, Make the Quesadillas

  1. Add refried beans to cover half of the shell. About ¼ cup of refried beans. 
  2. Sprinkle cheddar cheese over the top of the beans. About 2 tbsp cheddar cheese.
  3. Fold over. Line on the baking sheet. Repeat with the rest of the tortilla shells.

Third, Bake the Quesadillas

  1. Bake at 400 degrees for 11-12 minutes. Remove from oven. Use a pizza cutter to slice in half. 
  2. Enjoy! 

Fourth, Save the Leftovers for Ready Made Meals!

  1. Freeze the leftover quesadillas in a foil packet. Tear a piece of foil out. Lay one baked quesadilla on the foil. Wrap in a pocket and place in the gallon sized ziplock bag. Repeat until all are packed. 
  2. Place in freezer.

Now you have healthy lunches or dinners for days!

Ingredients
  

  • 2 1/2 cups dried pinto beans
  • 6 cups vegetable stock or bean stock if you have that on hand
  • 3 cloves garlic diced
  • 1 whole onion peeled and cut in half
  • 1 tsp Mediterranean sea salt
  • 1 tsp Ground pepper
  • 1 1/2 tsp cumin
  • 1/2 tsp red pepper flakes 

Instructions
 

  • Add all the ingredients into the Instant Pot. In any order.
    2 1/2 cups dried pinto beans, 6 cups vegetable stock, 3 cloves garlic, 1 whole onion, 1 tsp Mediterranean sea salt, 1 tsp Ground pepper, 1 1/2 tsp cumin, 1/2 tsp red pepper flakes 
  • Press "beans." Set timer to 45 minutes. Turn valve to sealed.
  • When the timer goes off, you can allow to vent naturally or manually move the valve to venting. When it is finished venting, open the lid.
  • Remove the onion. If you have a few pieces left in there, it is ok.
  • Place a strainer inside a large bowl.
  • Next, wearing oven mitts, remove the silver pot inside the instant pot to drain the beans partially. Drain the beans in the strainer.
  • Pick up the strainer to shake the beans a bit. Place them back in the silver pot. Pour about 1/4 of the liquid back into the pot (about 1/2 a cup bean stock).
  • You can save the rest of the bean stock for another purpose, like a soup. Or, just rinse it down the sink.
  • Use an immersion blender to blend the beans into a blended consistency with a few chunks of beans.
    Serve warm with tortilla chips, or save and add to another recipe later!
