How Can I Throw Together an Egg Wrap Recipe?

What’s Your Breakfast Style?

  • First, decide if you are going to makes an egg wrap tortilla, an egg wrap sandwich, or an egg wrap breakfast cup.
  • Then, prepare your pan. This means you’re either going to be placing muffin liners in a muffin tin. Or, use parchment paper to cover your favorite baking sheet. Spray with olive oil (or cooking spray).

A Scrambled Egg Wrap Recipe

  • Now, make the egg scramble. In a medium bowl, whisk eggs with salt and pepper. Set to the side.
  • Then, in a large skillet or wok, over medium heat, add a bit of butter and let melt.
  • Add the Beyond Meat hamburger patties and cook breaking them into little pieces.
  • Add the egg mixture to the skillet. And scramble.
  • Add the cheese. Combine.

Building the Best Breakfast Sandwich

Three ways to build the breakfast sandwich follow. Choose which one suits your breakfast style!

Egg Wrap Sandwich

  • Use your favorite bread. Sourdough is a fantastic, gut healthy choice (due to the fermentation in the sourdough). Take one piece of bread and cut in half.
  • Add egg scramble onto one of the open bread pieces. Top with a bit buffalo mozzarella and chives. Place other half of bread on top. Repeat until all sandwich halves are put together. Bake at 400 degrees Fahrenheit for 15 minutes until golden brown and melted.

Egg Wrap Tortilla

  • On your parchment paper, add one tortilla. Spoon egg scramble onto half of the tortilla shell. Sprinkle with chives, add salsa if you’re using it.
    • Note: Our kids do not love this egg wrap recipe with salsa, but they will eat it for every meal without it! If you’re using salsa and planning on giving it to your kids, check the spice factor on the salsa.
  • Fold over the tortilla half that is not covered with eggs to make a quesadilla. Flip once and line up on baking sheet. Repeat until all tortillas and egg scramble have been used. Bake at 400 degrees Fahrenheit for 15 minutes until lightly browned.

Breakfast Egg Wrap Recipe in a Muffin Tin

  • Place a tortilla in the lined muffin space. Gently press down so that it is mostly in a small cup.
    • Note: This works best with thin, flexible tortillas. Low carb tortillas rip easily and will not work for the muffin tin approach. Neither will the really dense tortillas that are labeled “fluffy”. If you have either of these types of tortillas, make the quesadilla egg wrap tortilla above.
  • Spoon 2 tbsp egg scramble, one tbsp salsa, and a sprinkling of green onions or chives into the tortilla.
  • Fold over in half the short way (hamburger style) and then the long way (hot dog style). Use two toothpicks to secure.
  • Spray with olive oil to lightly brown in the oven.
  • Bake at 400 degrees for 15 minutes.

An Egg Wrap Recipe You Can Adapt To You

These egg wraps are vegetarian, but they are still filling! You can make them with your favorite bread, as an egg wrap tortilla quesadilla, or as a scrambled egg wrap recipe in a muffin tin! Are you watching your cholesterol? Try making this an egg white wrap recipe by eliminating the yolks in your egg scramble!

Consider the Spice Factor

Depending on who you are making an egg wrap tortilla for will determine the amount of salsa, or if you include salsa at all. For our kids, if I include the salsa, they will pass on the egg wrap. So, we usually skip it if they are eating them. Or, I will make some egg wraps with salsa, some without salsa, and label the bags accordingly when I freeze them.

Pro Tip
Easy Lunch to Pack

These egg wrap tortillas are so easy to pack and go that the kids and I will take them in lunch! They are a healthy lunch option that will easily keep you full until dinner time.

Try Farm Fresh Eggs

We found a local farmer that sells eggs from her little farm. Farm fresh eggs are SO MUCH more flavorful and creamy (I feel like they are more creamy, is that a thing?) then store bought eggs. If you don’t know someone locally, check out your farmer’s market for fresh eggs that you will love!
