3 Steps to a Delicious and, Dare We Say Healthy, White Bean Dip

You are going to love this white bean dip because it is quick, affordable, absolutely addictively delicious, and you can eat as much of it as you want.

Equipment

Ingredients
  

Beans
  • 1 lb dried Northern Beans
  • 6 cups chicken stock or chicken broth
  • 1 bay leaf 
  • 1.5 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp dried thyme
  • 2 tsp salt
Bean Dip
  • 1/3 cup olive oil
  • 1 tbsp onion powder
  • 2 sprigs rosemary leaves de-stemmed and minced
  • 2 cups cooked beans (from instant pot recipe included here)
  • salt to taste
  • freshly ground pepper to taste
  • 2 tbsp dense balsamic vinegar or, more or less, to taste

Instructions
 

Make the Beans

  • Pour 1 lb or 2 1/2 cups northern dried beans into your Instant Pot. 
    1 lb dried Northern Beans
  • Add garlic powder, onion powder, thyme and salt. 
    1.5 tbsp onion powder, 1 tbsp garlic powder, 1 tsp dried thyme, 2 tsp salt
  • Pour in chicken stock.
    6 cups chicken stock
  • Place bay leaf on top.
    1 bay leaf 
  • Close your Instant Pot lid and turn the valve to "sealed."
  • Press the beans button. This should set the time for 30 minutes.
  • When the timer goes off, you can vent naturally or manually. Then proceed to make the white bean dip!

Make the White Bean Dip

  • After draining your cooked beans, take 2 cups of cooked beans and place them in a small pot.
    2 cups cooked beans
  • Store the rest of your cooked beans in a container for later.
  • Add olive oil, salt, and onion powder.
    1/3 cup olive oil, 1 tbsp onion powder, salt
  • Place the pot on a stove and bring to a low boil. Turn down heat immediately to low.
  • Using your immersion blender, blend the beans until creamy. Add rosemary.
    2 sprigs rosemary leaves
  • Transfer dip to a bowl or serving dish. Drizzle extra virgin olive oil and balsamic vinegar over top. Ground fresh pepper to taste.

  • Serve immediately with your favorite crackers or baguette!

This white bean dip recipe is pretty basic, there are not a lot of ingredients. However, the ingredients are all healthy!
