How Complicated Is It To Throw Together Asian Shrimp Stir Fry?

This asian shrimp recipe is really not hard at all! Better yet, it all comes together in 20 minutes from start to finish!

  • First, remove the shrimp shells and marinade them in a bowl with Teriyaki sauce and arrowroot powder.
  • Second, while the shrimp is sitting there soaking in all of that flavor, make the rice. If you have an Instant Pot, use it. It will come out perfect EVERY TIME and takes me about 2 minutes to prep.
  • Third, while the rice is cooking, chop the stir fry vegetables.
    • Dice two colored bell peppers, whichever colors you like!
    • Thinly slice one large Spanish onion.
    • Mince three garlic cloves.
  • Finally, stir fry! Add olive oil to a wok.
  • Throw in your onions and garlic. Stir fry. Add your bell peppers, water chestnuts and baby corn. Stir fry. Add the sugar snap peas. Stir fry. Add the shrimp and marinade. Stir fry. Finally add the thyme, vinegar, and tamari sauce. Stir fry until shrimp is lightly pink and tender. All of this takes about 8 to 10 minutes.
  • That’s it! Add some soy sauce to your brown rice. Place on a plate and add a heaping spoonful o of asian shrimp stir fry over the top. Serve hot!

Important! Buy raw shrimp. If you buy your shrimp precooked, they might overcook in the wok. To keep your asian shrimp moist, throw them in toward the end of the stir fry and let them cook until they are lightly pink.

Part of how you keep the asian shrimp moist is also in the shrimp stir fry marinade. First, make sure you de-shell your asian shrimp. Then, marinade your shrimp in a bowl with the Teriyaki marinade and arrowroot powder. Stir lightly.

Kinder’s Teriyaki marinade is organic, vegan (and vegetarian of course), and only 25 calories per tablespoon. It still has a few preservatives, however, so if you are one hundred percent real food, you can make your own teriyaki marinade. But, honestly, this one is really pretty good for you, isn’t too salty, and is sweet without being over the top.

You can find Kinder’s Teriyaki marinade at Costco, depending on what they have on stock. That is where I found our bottle. Or, you can order it on Amazon here and pick it up curbside at Whole Foods.

You can marinade your asian shrimp up to 24 hours ahead of time. Combine marinade and shrimp in a bowl. Cover with plastic wrap and place in the refrigerator until ready to stir fry!

The Rice
  • 2 cups basmati rice whole grain
  • 3 1/2 cups stock this could be chicken stock, vegetable stock, or bean stock whichever you have lying around!
  • 2 tbsp olive oil extra virgin
The Asian Shrimp Stir Fry
  • 2 colored bell peppers sliced
  • 1 can baby corn chopped
  • 1 can water chesnuts
  • 1 large Spanish onion or yellow onion
  • 2 bags sugar snap peas (16 oz)
  • 3 cloves garlic minced
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • 1 tbsp apple cider vinegar
  • 1/2 cup Tamari sauce or soy sauce
  • 1 lb raw shrimp de-shelled and uncooked

Instructions
 

The Rice

  • First add the rice and stock into the Instant Pot. If you do not have an Instant Pot, cook the rice according to the package directions.
    2 cups basmati rice, 3 1/2 cups stock
  • Add the olive oil to the instant pot.
    2 tbsp olive oil
  • Move the instant pot valve to sealed. Press rice.
  • Timer will automatically go to 12 minutes and that is perfect. You're done! The rice will stay warm as long as you need (up to 10 hours!).
  • When ready to serve, you can add 1/4 cup Tamari sauce to the rice and stir. You'll have asian brown rice perfect to serve with this delicious asian shrimp stir fry!
    1/2 cup Tamari sauce

The Asian Shrimp Stir Fry

  • In a wok or large skillet, add the onion saute.
    1 large Spanish onion
  • Add the garlic, saute.
    3 cloves garlic
  • Add bell peppers, sugar snap peas, water chestnuts, and baby corn. Saute for 6-8 minutes.
    2 colored bell peppers, 1 can baby corn, 2 bags sugar snap peas, 1 can water chesnuts
  • Add the shrimp.
    1 lb raw shrimp
  • Then add the thyme, the apple cider vinegar and the tamari sauce. Stir fry, continuously stirring, until shrimp is lightly pink all the way through.
    1 tsp dried thyme, 1 tbsp apple cider vinegar, 1/2 cup Tamari sauce
  • You're ready to plate dinner! Place a heaping spoonful (or two) or brown rice on your place. Top with asian shrimp stir fry! Enjoy!
