Breakfast Tostadas Recipe on a Griddle
The best thing about bringing the diner to your kitchen besides the AMAZING BREAKFAST TOSTADA is the one pan, easy clean up. If you don’t have a griddle, think of all the possibilities! Pancakes, tortillas, tacos, fajitas, bacon, and obviously, breakfast tostadas!
This one is the most similar to what I have. It’s ceramic and chemical free and covers two gas stove burners.
Once I made the switch to a gas stove, I just bought a griddle pan that could go directly over the stove.
Electric griddle, are AMAZING because you can control the heat to the exact temperature you desire. The only downside is finding a place to store it when it’s not in use. This electric griddle from Amazon is ceramic and chemical free!
Healthy Breakfast Tostada Ingredients

These antioxidants have been found to reduce your risk of chronic disease and cancer (Ombra et al., 2016).
Breakfast Tostada Scrambled Eggs and Apples
A delicious and sweet addition to this breakfast tostada recipe is topping with sliced apple. Grilling the sliced apple on the griddle makes it slightly browned and sweetened. The apple really makes the tostada in this recipe. But, apples are more than just a pretty face, they also are healthy for your gut and overall health.
A Mexican Breakfast Tostada with Apple
There is a reason we all have heard the saying, an apple a day keeps the doctor away. In fact, apples are high in fiber and antioxidants including polyphenols. However, the majority of fiber and nutritious antioxidants are in the skin (Feng et al., 2021), so skip the extra effort of peeling your apples and eat them with the skin intact!

They found that across controlled trials and cohort studies there was significant evidence of the beneficial impacts of apples on our health (Fabiani et al., 2016). Good Morning Breakfast Tostada
Equipment
- 1 griddle
Ingredients
- 6 green onions chopped
- 1/2 can black beans drained and rinsed
- 1 ½ cups shredded cheddar cheese
- 3/4 cup cilantro roughly chopped
- 1 apple sliced, I prefer Honeycrisp apples
- 3 soft corn tortilla shells
- 2 sprays olive oil spray Spray about 3 seconds
- 5 eggs
- Mediterranean sea salt to taste
- ground pepper to taste
Instructions
Make the Egg Scramble
- Spray (1 spray) the griddle with olive oil. Heat griddle to medium high.2 sprays olive oil spray
- Add eggs to the griddle. Using a spatula or wooden spoon, scramble the eggs.5 eggs
- Add half of can of black beans. Stir.1/2 can black beans
- Add the chopped green onions.6 green onions
- Add the apples on a separate space in the griddle to brown lightly.1 apple
- Then, add 1 cup of the shredded cheese to the egg scramble.1 ½ cups shredded cheddar cheese
Brown the Tortillas
- Move apples to the side of the griddle and spray (once) the open space again lightly with olive oil.2 sprays olive oil spray
- Add the corn tortillas allowing to brown lightly on one side. Flip. Then, brown lightly on other side.3 soft corn tortilla shells
Serve
- Plate the tortillas, one on each plate. Add egg scramble on top. Top with apple slices.
- Garnish with fresh cilantro, green onion, and the 1/2 cup left of shredded cheese as you like.3/4 cup cilantro, Mediterranean sea salt, ground pepper
