So, What is it Going to Take To Put This Together?

  • First you chop the onion. Do the onion first so the allicin can activate (superhero gut microbe)!
  • Second you chop the peaches.
  • Third you chop the jalapeño.
  • Finally you chop the cilantro.
  • Throw them all in a bowl. Toss with apple cider vinegar, salt, and pepper.
  • Devour!

Free radicals are the bad guys which wreak havoc on our health and relate to chronic disease. In one small clinical study, 10 men were tested pre and post drinking peach juice (literally juiced peaches, not the stuff from the store). They found positive changes in men’s plasma within only 30 minutes of drinking the juice. Doctors concluded that the peaches “may reduce damage from oxidative stress” (Ko et al., 2005).

Ingredients
  

  • 3 peaches diced
  • 1/2 red onion about 1/2 cup minced 
  • 1 jalepeno minced
  • 1 tsp apple cider vinegar
  • 1/4 cup cilantro roughly chopped
  • Mediterranean sea salt   to taste
  • ground pepper to taste

Instructions
 

Make the Salsa

  • Dice the peaches. Put in a medium-small sized bowl.
    3 peaches
  • Mince the red onion. Add to the bowl.
    1/2 red onion
  • Mince the jalapeño. I usually use gloves or a little baggie around my hands when I do this so I don't touch it and then later touch my eyes (very painful if that happens!!).
    Add to the bowl.
    1 jalepeno
  • Add the apple cider vinegar.
    1 tsp apple cider vinegar
  • Fold in the cilantro.
    1/4 cup cilantro
  • Salt and pepper to taste.
    ground pepper, Mediterranean sea salt  
  • Serve immediately or throw in the fridge for later. Enjoy!
