Easy Rainbow Tomato Salad with Dijon

Rainbow tomato salad uses FRESH tomatoes and is a special summer treat you’ll make again and again!. This tomato salad recipe is VERY simple and delicious. The dijon mustard combines with red wine vinegar to balance the natural sweetness from the tomatoes with a tart kick.

I like to serve this easy rainbow tomato salad as a side to veggie burgers on the grill. But, I’ve also been known to make it with a homemade frittata (kid’s fave meal). If you have extras, you can store tomato salad in the refrigerator for a healthy, light lunch the next day.

Tomatoes are a prebiotic ingredient for your gut health. What does this mean? They help healthy bacteria grow in your guts, making your gut stronger and you healthier (Collins, 2020).

Gut Healthy Ingredients in Easy Rainbow Tomato Salad

While I always have diced tomatoes on hand, fresh tomatoes are a summer treat that I look forward to each year. Tomatoes support your overall health contributing to your microbiota with Lactobacillus rhamnosusBifidobacterium Bifidum, and antioxidants!

Tomatoes are a super food benefitting our microbiome

Kait’s Cupboard

Tomatoes May Protect Against Cancer and Heart Disease

Though they have been blamed for causing inflammation in the past, in fact, they provide protective lycopene nutrients reducing the risk of cancer and heart disease (Bulsiewicz, 2020). As a prebiotic, tomatoes–both raw and cooked–support healthy bacteria to grow in your gut (Collins, 2020). Some of the healthy micro superstars they help promote include Lactobacillus rhamnosus and Bifidobacterium bifidum (Hyperbiotics). These bacteria along with other antioxidants holistically support your microbiome. If you’re interested in learning more about how Lactobacillus rhamnosus and Bifidobacterium bifidum support a healthy gut, check out the links for more in my posts. Or, you can visit the gut health page to read more on healthy foods and your gut.

While both raw and cooked tomatoes contain lycopene, cooking tomatoes better preserves the lycopene nutrients as they digest in our bodies providing us with more antioxidant absorption (Hyperbiotics). And, more antioxidants fuels L. reuteri bacteria a huge contributor to a healthy microbiome! Win-Win.

Pro Tip

Use a serrated knife to cut tomatoes. This will allow you to easily cut through them without pressing too hard and bruising the tomato or squirting juice all over yourself. Before learning this trick, I definitely was in the wardrobe change camp about 50% of the time I cut tomatoes.

For this salad, slice lengthwise when you cut the tomatoes. This will leave a clean cut and again, juice will not squirt all over the place.
