Rainbow Tomato Salad with Dijon

  • 1 medium bowl

Ingredients
  

  • 2 10 oz cartons cherry tomatoes  I prefer wild wonders organic tomatoes
  • 4 tbsp olive oil  extra virgin
  • 2 tbsp red wine vinegar
  • 1/2 tbsp dijon mustard
  • Mediterranean sea salt   to taste
  • ground pepper to taste

Instructions
 

Add the Wet Ingredients

  • Add the olive oil, red wine vinegar, and dijon mustard together first into the serving dish. Stir with a fork.
    4 tbsp olive oil , 2 tbsp red wine vinegar, 1/2 tbsp dijon mustard

Add the Tomatoes

  • Using a serrated knife, halve the cherry tomatoes lengthwise (so they don’t squirt when you cut them).
    2 10 oz cartons cherry tomatoes 
  • Add tomatoes to the bowl.
  • Stir gently folding into the dressing.
  • Season to taste with salt and pepper.
    Mediterranean sea salt  , ground pepper

Serve

  • Serve at room temperature. Enjoy!

Notes

Tomatoes are like meat. You’ll do less damage to the tomato and will not have to press hard at all if you use a serrated knife to cut.
