High in water, similar to cucumbers, bell peppers are a nutrient dense vegetable. With a low calorie burden, bell peppers pack a good deal of nutritional benefit with little cost. They are an excellent source of healthy carbs, protein, fat, and fiber. Similar to kale and carrots, the antioxidants in bell peppers support healthy eyes. Additionally, as a rich source of vitamin C, they may prevent anemia or low iron levels.

Air Fryer Fish Tacos

The air fryer is honestly so good at cooking fish that sometimes it’s hard NOT to use it. Summer beckons, hence the grill recipe. But, if you don’t have a grill, try the air fryer!

My General Electric oven has an air fry mode, so I use that. It works like a charm and I don’t need to worry about crowded food or separate into batches.

This recipe will also work with a countertop air fryer.

If you use the air fryer, don’t use the foil pouch, just add the fish and seasonings on a pan or in the air fry basket (if using an air frying machine), and cook for about 8-10 minutes at 400 degrees. It will be perfectly crisped on the outside and moist and flaky on the inside!

How to a Greek Fish Recipe on the Grill

Ingredients
  

Hummus
  • 2 cans chickpeas  14.5 oz per can
  • 4 cloves garlic  minced
  • 2 small to medium lemons 
  • 1/2 cup garlic tahini
  • 2 tbsp olive oil  extra virgin
  • 1 tsp Mediterranean sea salt
  • 2 tsp cumin
  • 2 tsp smoky paprika
Greek Fish Recipe
  • 2 lbs tilapia or halibut
  • 1/2 bottle Tessamae’s Lemon Garlic organic
  • 1 large lemon  
  • Mediterranean sea salt to taste
  • ground pepper to taste
  • 1 tsp dried thyme
  • 2 tbsp apple cider vinegar unpasteurized
  • 4 tsp dried oregano
  • 1 tsp cumin
Toppings
  • 1 large red onion sliced thinly
  • 1 large yellow bell pepper
  • 2 tbsp olive oil extra virgin
  • 1 cup Smoked gouda shredded
Tortillas
  • 4 taco sized flour tortillas warmed in the pan

Instructions
 

Make the Garlic Hummus

  • 2 cans chickpeas , 4 cloves garlic , 2 small to medium lemons , 1/2 cup garlic tahini, 2 tbsp olive oil , 1 tsp Mediterranean sea salt, 2 tsp cumin, 2 tsp smoky paprika

Grill the Fish

  • Heat the grill to medium.
  • On a piece of aluminum foil with edges folded up to keep in dresssing, place the fish.
    2 lbs tilapia or halibut
  • Pour the bottle of lemon garlic dressing over the fish. Sprinkle with salt and pepper and dried thyme.
    1/2 bottle Tessamae’s Lemon Garlic organic, Mediterranean sea salt, ground pepper, 1 tsp dried thyme
  • Then, add apple cider vinegar, olive oil, oregano, and cumin. Add sliced lemon overtop.
    2 tbsp apple cider vinegar, 4 tsp dried oregano, 1 tsp cumin, 2 tbsp olive oil, 1 large lemon  
  • Using another piece of aluminum foil, place over the top and fold pieces together around the edges creating a pouch. Place on the grill for 12-14 minutes on medium heat. 

Sauté the Bell Peppers and Onion

  •  In a large skillet, add 2 tbsp olive oil. Turn to medium high heat.

  • Add the red onion and bell pepper. Sauté for 6-8 minutes. While cooking, add salt and pepper to taste.
    Mediterranean sea salt, 1 large red onion, 1 large yellow bell pepper, ground pepper
  • When the bell peppers and onions are finished, remove from heat and place them into a serving bowl. Keep the skillet out.
  • Shred smoked gouda cheese for topping.
    1 cup Smoked gouda
  • Finally, add flour tortillas, to the heated skillet you used for the bell pepper medley. Heat tortillas with a tiny amount of olive oil, about 4 seconds per side.

Assemble!

  • Assemble your greek fish recipe on a taco! In this order, place a flour tortilla, then two scoops hummus, ½ a fish filet, 1 scoop bell pepper and onion, and finish with shredded gouda. Enjoy!
