Ingredients
  

  • 4 bananas overly ripened
  • 1/4 cup Greek yogurt
  • 1/4 cup raw filtered honey
  • 2 eggs
  • 1/3 cup coconut oil Target’s unrefined virgin coconut oil has a stronger coconut flavor that I love. 
  • 2 cups whole wheat white flour King Arthur's brand
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • salt to taste

Instructions
 

  • Preheat oven to 350 degrees Farenheit. Place muffin liners into muffin tin.
  • In a large bowl, combine mash four large bananas.

  • Add Greek yogurt, honey, eggs, and coconut oil. Stir.
    1/4 cup Greek yogurt, 1/4 cup raw filtered honey, 2 eggs, 1/3 cup coconut oil
  • Add flour, baking powder, baking soda, cinnamon and salt. Stir until smooth, not clumpy.
    2 cups whole wheat white flour, 1/2 tsp baking powder, 1 tsp baking soda, 1 tsp cinnamon, salt to taste
  • Spoon batter into muffin tin liners about 3/4 (or slightly more) full.
  • Bake in oven for about 22 minutes.
