For the most crispy, perfectly moist air fryer black bean taquitos use your GE air fryer oven! Or, any smart oven on air fryer mode. These air fryer black bean taquitos are a love affair for me. You will love the little roll ups and dipping them in your favorite salsa or taco sauce.
Air fryer black bean taquitos are crispy (thank you air fryer!), full of smooth black bean dip, and seasoned with lime juice. I made nearly two dozen and frankly our family devoured them all! If you want left overs, make a double batch!

What Steps are Involved to Put These Air Fryer Black Bean Taquitos Together?
- First, make the black bean mixture in the food processor. Basically, this only requires you to dump ingredients into the processor.
- Second, sauté the vegetables.
- Third, assemble the taquitos.
- Fourth, air fry for 6-8 minutes (with a break in cook time to flip them over).

The gut healthy ingredients in black beans make these taquitos guilt free and worth adding into a regular lunch prep or game day rotation. Black beans are full of fiber and have been found to support blood sugar regulation and decreased risk of chronic disease including heart disease and type II diabetes (Winham et al., 2017). Why? As an excellent source of plant-based fiber, they also are rich in antioxidants which help reduce the bad-guy, free radicals floating around your gut (Chávez-Mendoza & Sánchez, 2017). Black Beans Help Maintain Healthy Blood Sugar
Black beans, have a large proportion of polyphenols which have been found to help regulate blood sugar (Chávez-Mendoza & Sánchez, 2017). More stable blood sugar means less risk for type II diabetes (Chávez-Mendoza & Sánchez, 2017). Similar to the post I wrote on chickpeas, our bodies process black beans more slowly preventing large spikes in blood sugar across the day (Reverri et al., 2015).
Specifically, the polyphenol antioxidant, anthocyanidin, has been found to help your body become more sensitive to insulin (Damián-Medina et al, 2020; Reverri et al., 2015). As an added bonus, it may also help your body digest carbs (Reverri et al., 2015).
Meals with black beans have both antioxidants and a significant amount of fiber bringing down the glycemic index (Winham et al., 2017). The fiber in black beans slows the amount of time it takes them to get through your intestine. More time digesting gives more time for your body to absorb sugar and release it into your bloodstream (Chávez-Mendoza & Sánchez, 2017).

Air Fryers and the General Electric Oven Air Fryer Mode
This recipe will work in an oven, but is even better in an air fryer. I have an oven that has “air fry” mode. It’s amazing, and cooks so quickly, without a ton of oil and grease. I really cannot say how much I love the air fryer mode. It does fish PERFECTLY. Lightly crisped on the outside and soft and moist on the inside. Recipes to come on that.
Additionally, air frying lightly crisps the tortilla shell and makes the fact that it is 100% whole wheat hardly noticeable. If you have kids who don’t love whole wheat, seriously, try this. Tortillas cook quickly and evenly. If you don’t have an oven with air fryer mode, try this recipe in your air fryer!
Finally, if you don’t have an air fryer yet, you can add one to your Instant Pot! I mean, if you didn’t have enough reasons to own an Instant Pot, this adds just one more. The air fryer attachment transforms your pot without the added bulk of an entire machine and will make your taquitos perfectly browned, lightly crisped, and done in less than 7 minutes flat!
Air Fryer Black Bean Taquitos
Equipment
- 1 Air Fryer (I use my General Electric wall oven with the air fryer mode)
- 2 baking sheets
- Aluminum Foil
- 1 medium skillet
Ingredients
Black Bean Mix
- 3 cans black beans drained and rinsed
- 3 limes juiced
- 1/2 cup cilantro roughly chopped
- 1 tbsp cumin
- Mediterranean sea salt to taste
- 1/2 tsp cayenne powder
Vegetable Saute
- 2 medium Spanish onions minced
- 1 large jalapeño minced
- 1 tbsp olive oil extra virgin
Tortillas and Toppings
- 1 tbsp Barbacoa cooking sauce per taquito (1 jar is about enough for the whole batch)
- 1 1/2 packages shredded cheddar cheese
- 15 taco size tortillas 100% whole wheat
- Greek yogurt optional, I like whole milk Greek yogurt
- salsa optional
- 2-3 seconds olive oil spray extra virgin (per baking sheet or batch in air fryer)
Instructions
Make the Bean Mix
- In a large food processor, combine black beans, limes, cilantro, cumin, salt, and cayenne powder.3 cans black beans, 3 limes, 1/2 cup cilantro, 1 tbsp cumin, Mediterranean sea salt, 1/2 tsp cayenne powder
- Press on and allow to mix until ingredients are well blended. Set aside.
Sauté the vegetables
- In a medium skillet, add olive oil and turn to medium heat.1 tbsp olive oil
- Sauté onion and jalepeno. Remove from heat. Set aside.2 medium Spanish onions, 1 large jalapeño
Assemble the taquitos
- Place your tortillas, black beans, vegetable saute, cheddar cheese, and Barbacoa sauce on the counter ready for taco assembling.
- Open the tortilla, spread 1 ½ tbsp black bean mix on half of the tortilla.15 taco size tortillas
- Top 1 tbsp of the vegetable mix on the black bean mixture.
- Add 1 tbsp of red Barbacoa sauce.1 tbsp Barbacoa cooking sauce
- Sprinkle 1 tbsp cheddar cheese. Tightly roll up the tortilla.1 1/2 packages shredded cheddar cheese
- Place the tortilla roll on a foil lined baking pan.
- Repeat until all tortillas are filled and black bean mixture is gone.
- Lightly spray with olive oil.2-3 seconds olive oil spray
- If you are using the air fry function in your General Electric oven, turn on the air fryer mode and set the temperature to 400 degrees Fahrenheit. Air fry for 4-5 minutes.
- If you are using an air fryer, take your tortilla wraps from the baking sheet and place them in batches into the basket. Air fry for 5-7 minutes.
- When the time is up, open the oven/fryer. Flip with a spatula, and fry for another 30 seconds to 1 minute.
- Enjoy! Serve with salsa or Greek yogurt.Greek yogurt, salsa
