Air Fryer Black Bean Taquitos

Air Fryer Black Bean Taquitos can be made in your air fryer or oven using air fry mode. They are crispy, full of smooth black bean dip, and seasoned with lime juice. Dip them in your favorite salsa or Greek yogurt for a fun and healthy snack.

Equipment

  • 1 Air Fryer (I use my General Electric wall oven with the air fryer mode)
  • 2 baking sheets
  • Aluminum Foil
  • 1 medium skillet

Ingredients
  

Black Bean Mix
  • 3 cans black beans drained and rinsed
  • 3 limes juiced
  • 1/2 cup cilantro roughly chopped
  • 1 tbsp cumin
  • Mediterranean sea salt to taste
  • 1/2 tsp cayenne powder
Vegetable Saute
  • 2 medium Spanish onions minced
  • 1 large jalapeño minced
  • 1 tbsp olive oil extra virgin
Tortillas and Toppings
  • 1 tbsp Barbacoa cooking sauce per taquito (1 jar is about enough for the whole batch)
  • 1 1/2 packages shredded cheddar cheese
  • 15 taco size tortillas 100% whole wheat
  • Greek yogurt optional, I like whole milk Greek yogurt
  • salsa optional
  • 2-3 seconds olive oil spray extra virgin (per baking sheet or batch in air fryer)

Instructions
 

Make the Bean Mix

  • In a large food processor, combine black beans, limes, cilantro, cumin, salt, and cayenne powder.
    3 cans black beans, 3 limes, 1/2 cup cilantro, 1 tbsp cumin, Mediterranean sea salt, 1/2 tsp cayenne powder
  • Press on and allow to mix until ingredients are well blended. Set aside.

Sauté the vegetables

  • In a medium skillet, add olive oil and turn to medium heat.
    1 tbsp olive oil
  • Sauté onion and jalepeno. Remove from heat. Set aside.
    2 medium Spanish onions, 1 large jalapeño

Assemble the taquitos

  • Place your tortillas, black beans, vegetable saute, cheddar cheese, and Barbacoa sauce on the counter ready for taco assembling.
  • Open the tortilla, spread 1 ½ tbsp black bean mix on half of the tortilla.

  • Top 1 tbsp of the vegetable mix on the black bean mixture.
  • Add 1 tbsp of red Barbacoa sauce.
    1 tbsp Barbacoa cooking sauce
  • Sprinkle 1 tbsp cheddar cheese. Tightly roll up the tortilla.
    1 1/2 packages shredded cheddar cheese
  • Place the tortilla roll on a foil lined baking pan.
  • Repeat until all tortillas are filled and black bean mixture is gone.
  • Lightly spray with olive oil.  
    2-3 seconds olive oil spray
  • If you are using the air fry function in your General Electric oven, turn on the air fryer mode and set the temperature to 400 degrees Fahrenheit. Air fry for 4-5 minutes.
  • If you are using an air fryer, take your tortilla wraps from the baking sheet and place them in batches into the basket. Air fry for 5-7 minutes.
  • When the time is up, open the oven/fryer. Flip with a spatula, and fry for another 30 seconds to 1 minute. 
  •  Enjoy! Serve with salsa or Greek yogurt.
