- First, decide if you are going to makes an egg wrap tortilla, an egg wrap sandwich, or an egg wrap breakfast cup.
- Then, prepare your pan. This means you’re either going to be placing muffin liners in a muffin tin. Or, use parchment paper to cover your favorite baking sheet. Spray with olive oil (or cooking spray).
A Scrambled Egg Wrap Recipe
- Now, make the egg scramble. In a medium bowl, whisk eggs with salt and pepper. Set to the side.
- Then, in a large skillet or wok, over medium heat, add a bit of butter and let melt.
- Add the Beyond Meat hamburger patties and cook breaking them into little pieces.
- Add the egg mixture to the skillet. And scramble.
- Add the cheese. Combine.

Egg Wrap Sandwich
- Use your favorite bread. Sourdough is a fantastic, gut healthy choice (due to the fermentation in the sourdough). Take one piece of bread and cut in half.
- Add egg scramble onto one of the open bread pieces. Top with a bit buffalo mozzarella and chives. Place other half of bread on top. Repeat until all sandwich halves are put together. Bake at 400 degrees Fahrenheit for 15 minutes until golden brown and melted.
Egg Wrap Tortilla
- On your parchment paper, add one tortilla. Spoon egg scramble onto half of the tortilla shell. Sprinkle with chives, add salsa if you’re using it.
- Note: Our kids do not love this egg wrap recipe with salsa, but they will eat it for every meal without it! If you’re using salsa and planning on giving it to your kids, check the spice factor on the salsa.
- Fold over the tortilla half that is not covered with eggs to make a quesadilla. Flip once and line up on baking sheet. Repeat until all tortillas and egg scramble have been used. Bake at 400 degrees Fahrenheit for 15 minutes until lightly browned.
Breakfast Egg Wrap Recipe in a Muffin Tin
- Place a tortilla in the lined muffin space. Gently press down so that it is mostly in a small cup.
- Note: This works best with thin, flexible tortillas. Low carb tortillas rip easily and will not work for the muffin tin approach. Neither will the really dense tortillas that are labeled “fluffy”. If you have either of these types of tortillas, make the quesadilla egg wrap tortilla above.
- Spoon 2 tbsp egg scramble, one tbsp salsa, and a sprinkling of green onions or chives into the tortilla.
- Fold over in half the short way (hamburger style) and then the long way (hot dog style). Use two toothpicks to secure.
- Spray with olive oil to lightly brown in the oven.
- Bake at 400 degrees for 15 minutes.

Egg Wrap Sandwich Freezing and Reheating Directions
Tear a long piece of aluminum foil. Place sandwich half in foil and fold over to create a sealed sandwich. Place in a freezer safe gallon size bag. Repeat with the rest of your left over sandwiches. You can add as many wrapped sandwich halves to the bag as you can fit before sealing and labeling. Place in freezer. When you’re ready for another delicious egg wrap sandwich, open the bag, take out one wrapped sandwich half. Unwrap and place on a microwave safe plate. Microwave for 1 to 1 minute 30 seconds. Enjoy!
Egg Wrap Tortilla Freezing and Reheating Directions
Tear a very long piece of aluminum foil to fit two quesadillas. Place one egg quesadilla on one half of the foil. Place another egg quesadilla on the other half of the foil. You can add as many wrapped quesadillas to the bag as you can fit before sealing and labeling. Place in freezer. When you’re ready for another delicious egg wrap tortilla, open the bag, take out one wrapped quesadilla. Unwrap and place on a microwave safe plate. Microwave for 1 to 1 minute 30 seconds. Enjoy!

Your breakfast egg wrap recipe bakes into a perfect little breakfast cup. You can also freeze them like this! Place each breakfast egg wrap into a sandwich bag, individually. Seal. Then, place all the sandwich bags into a freezer safe gallon bag for freezing. Be careful not to overstuff so they do not break.

- 1 muffin pan
- 10 jumbo muffin liners
Ingredients
- 2 Beyond Meat hamburger patties
- 6 eggs
- 1 tbsp butter
- 3/4 cup shredded cheddar cheese
- 5 green onions sliced
- 10 tortillas 100% whole wheat
- 1 cup salsa medium
- olive oil spray to coat tortillas
- 1 bunch chives optional
- 1/2 ball buffalo mozzarella optional
Instructions
Prepare the muffin pan
- Place liners in each muffin space
- Preheat the oven to 400 degrees Fahrenheit
Egg Scramble
- In a medium size bowl, whisk 6 eggs with salt and pepper.6 eggs
- Over medium heat, add butter to skillet.1 tbsp butter
- Place hamburger patties in the skillet and cook, breaking patties into small pieces.2 Beyond Meat hamburger patties
- Add the whisked eggs to the skillet.6 eggs
- Add shredded cheddar and scramble.3/4 cup shredded cheddar cheese
Assemble
