Chicken Soup Recipe for a Perfect Soup Season
Equipment
Ingredients
- 1 large Spanish onion diced
- 1 large lemon halved
- 2 lbs chicken breasts sliced into cubes
- 1 tsp marjoram
- 5 large carrots sliced
- 4 celery stalks sliced
- 6 cloves garlic cloves minced
- 2 1/2 tsp rosemary diced
- 8 cups chicken stock
- 2 tbsp extra virgin olive oil
- 2 tbsp whole wheat flour
- 1.5 tsp salt
- 2 tsp ground black pepper
- 5 oz baby spinach
- 1 lb pappilon pasta
Instructions
Make the Soup
- First chop the onion and garlic. Set to side.1 large Spanish onion, 6 cloves garlic cloves
- Then, in an instant pot, add 1 tbsp olive oil.2 tbsp extra virgin olive oil
- Add onion. Saute for about 2 minutes.1 large Spanish onion
- Add celery and carrots, saute another 2 minutes.4 celery stalks, 5 large carrots
- Add 1 more tbsp olive oil.2 tbsp extra virgin olive oil
- Add garlic cloves. Saute 1 minute.6 cloves garlic cloves
- Add flour.2 tbsp whole wheat flour
- Turn off instant pot.
- Add chicken stock, chicken, marjoram, rosemary, salt, and black pepper. Stir.2 lbs chicken breasts, 1 tsp marjoram, 2 1/2 tsp rosemary, 8 cups chicken stock, 1.5 tsp salt, 2 tsp ground black pepper
- Slice the lemon in half and add to the instant pot.1 large lemon
- Seal valve and press soup button. Set timer for 40 minutes.
Make the Pasta
- Meanwhile, cook the pasta according to the directions on the package. Cook noodles al dente, they will cook more in the soup once added together.1 lb pappilon pasta
- When the soup is done, instantly release the pressure valve.
- Open the lid and add 12 oz of baby spinach. Stir until wilted.5 oz baby spinach
- Serve! Spoon noodles into a bowl. Ladle the chicken soup over the top. Garnish with freshly ground black pepper if preferred. Enjoy!!
