Transform this into a Favorite Take on Chili
  • 2 14.5 oz cans kidney beans drained and rinsed
  • 1 cup frozen corn
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 bay leaf
  • 1/2 cup barbecue sauce
  • broken tortilla chips optional topping
  • shredded cheddar cheese optional topping
  • Greek yogurt optional topping
  • 1 avocado sliced, optional topping

Instructions
 

Then, transform your spaghetti sauce into chili.

  • Dump leftover spaghetti sauce into your Instant Pot.

  • Add the kidney beans. Open the can, dump beans into a strainer, and rinse with water before adding to the Instant Pot.

  • Add the frozen corn to the Instant Pot.

  • Add spices. Add chili powder and cumin to the Instant Pot.

  • Add bay leaf and barbecue sauce. Stir with a large spoon.

  • Close the lid and set the pressure valve to sealed. Press chili and set the timer for 30 minutes.
  • When finished cooking the Instant Pot will beep. You can choose to allow the pressure to release naturally or manually (by opening the valve from sealed to open). Remove bay leaf and stir.
  • Ladle chili into bowls and add your favorite toppings. Try Greek yogurt, shredded cheddar cheese, sliced avocado, and broken up tortilla chips! Enjoy!
