Pineapple Fish Tacos in the Air Fryer

Equipment

Ingredients
  

Tilapia
  • 6 filets tilapia 
  • 3 tbsp olive oil  extra virgin
  • 6 tsp ground cumin 1 tsp cumin per filet
  • 3 tsp chili powder ½ tsp chili powder per filet
  • Mediterranean sea salt to taste
  • ground pepper to taste
  • 1 lime juiced
Pineapple Salsa
  • 1 can pineapple chunks or 2 cups fresh pineapple cut into chunks
  • 1 jalepeno chopped
  • 1/2 medium red onion sliced
  • 1 tsp apple cider vinegar
  • 1/2 cup cilantro roughly chopped
  • Mediterranean sea salt  to taste
  • ground pepper  to taste
Lime Greek Yogurt and Other Toppings
  • 1/2 cup Greek yogurt  I use whole milk Greek yogurt
  • 1 lime grated and juiced
  • 6 flour tortillas  whole wheat for 1 extra plant point!
  • 1 large avocado peeled and sliced
  • 1 bunch bok choy or pad choy greens roughly chopped

Instructions
 

Make the Pineapple Salsa

  • In a food processor, dump in pineapple, jalepeno, red onion, apple cider vinegar, and cilantro.
    1 can pineapple chunks, 1 jalepeno, 1/2 medium red onion, 1 tsp apple cider vinegar, 1/2 cup cilantro
  • Press pulse. Until roughly combined. Add salt and pepper to taste.
    Mediterranean sea salt, ground pepper

Make the Lime Greek Yogurt 

  • Add Greek yogurt and 1 lime gratings and juice to a small bowl. Stir with a spoon until well combined.
    1/2 cup Greek yogurt , 1 lime

Air Fry the Tilapia

  • Cover the baking sheet with a large piece of aluminum foil.
    6 filets tilapia 
  • Place 6 Tilapia filets on the baking sheet. Pour 1/2 tbsp of olive oil over each filet.
    3 tbsp olive oil 
  • Sprinkle 1 tsp of ground cumin and ½ tsp of chili powder to each filet. Add salt and pepper to taste.
    6 tsp ground cumin, 3 tsp chili powder, Mediterranean sea salt, ground pepper
  • Drizzle juice of 1 lime over the tilapia filets.
    1 lime
  • Air fry at 375 degrees F for 15 minutes.

Assemble!

  • On a flour tortilla, add 1 fish filet. Top with pineapple salsa, a dollop of lime Greek yogurt, avocado slices, and pad choi greens.
