Instant Pot Meatball and Orzo Soup

Meatball orzo soup includes homemade turkey meatballs, fresh garlic, sliced carrots, and leafy escarole to impress everyone at the table!

Meatballs
  • 1 lb ground turkey organic
  • 1 large onion
  • 2 large eggs cage-free, beaten
  • 3/4 cup 100% whole wheat panko
  • 1 cup shredded smoked gouda 1/2 for meatballs, 1/2 for soup topping
  • 6 cloves fresh garlic minced
  • 1 tsp salt Mediterranean sea salt
  • 1 tsp ground pepper
Soup
  • 4 large carrots think Costco size
  • 1 head escarole
  • 10 cups chicken stock
  • 1 1/2 cups orzo whole wheat pasta

Instructions
 

Meatballs

  • Preheat oven to 400 degrees Farenheit.
  • Mix the meatball ingredients all together in a bowl. 
    1 lb ground turkey, 1 large onion, 2 large eggs, 3/4 cup 100% whole wheat panko, 1 cup shredded smoked gouda, 6 cloves fresh garlic, 1 tsp salt, 1 tsp ground pepper
  • Place meatballs, about 1.5 tbsp sized, on a pan.
  • Bake in oven between 15-17 minutes.
  • Makes about 28 meatballs. Remove the parchment paper after baking, discard.

Soup

  • Slice carrots. You can also chop them if you wanted smaller pieces.

  • In the Instant Pot, add carrots.
  • Chop up the head of escarole. Chop off the very bottom of the stem. Then, slice it up and then down the middle for reasonable pieces.

  • Add to the Instant Pot.
  • Add the chicken stock. And then salt and pepper to taste. 
    10 cups chicken stock
  • Add the meatballs to the pot. 
  • Close the lid of your instant pot and turn the valve to sealed. Push the soup button and set the time for 30 minutes.
  • When the timer goes off, release the pressure valve to let out the steam.

Orzo Pasta

  • Meanwhile, fill a pot with water and set on the burner.
  • Plan on setting it to boil at about 10 minutes prior to the soup timer going off.
  • Boil noodles.
    1 1/2 cups orzo whole wheat pasta

Notes

I boil my noodles in a separate pot because we often have left over soup and if the noodles are added to the soup ahead of time, they are soggy for left overs. However, if you want to eliminate a pot to clean, you could add the orzo right to the soup after the instant pot timer goes off and the pressure is released.
