If you have a regular oven, preheat it to 375 degrees Fahrenheit. If you are using the GE Smart Oven, you do not need to preheat the oven. Bonus!!
Wash the potatoes under the sink and then lightly prick them on the top and bottom with a fork. Then, take a baking sheet, cover it with aluminum foil and put the potatoes on it.

Pour the olive oil over the potatoes and sprinkle with salt and pepper. If you are using a regular oven, place potatoes in oven. Cook at 375 degrees Fahrenheit for 50-55 minutes.If you are using the GE Smart oven, you are lucky!! Not only do you not have to preheat the oven, but you can use the precision cook function. If you have GE precision cook, choose baked potatoes, the number of ounces, and press "next." Then, put your sheet in the oven on the rack that the oven tells you to place it. And, press start. The oven will automatically program and display the amount of time you need to cook your potatoes, giving you the perfect baked potato!

Prep the Baked Potato Stuffing
Prep the baked potato stuffing either ahead of time or while the baked potatoes are cooking. First, add about 1 to 1.5 tablespoons of extra virgin olive oil to a skillet and turn the burner onto medium high.

Add diced onion and sauté stirring regularly for about four minutes.

Add the black beans and stir regularly for another five minutes. The onions should be softened and lightly golden and translucent.
14.5 oz canned black beans
Add the taco seasoning and stir to coat all of the beans and onions in the seasoning. Remove from heat.

You can either set this to the side for when the potatoes are finished, or if you are prepping ahead of time, just put in a sealed container and place in the fridge for when you are ready!
Stuff the Baked Potatoes
Once your potatoes are baked, sliced them down the middle and leave about one to one and a half inches on either side of the ends of the potato so you can pinch them lightly to pop them open in the middle.
Using a spoon, stuff your potatoes with the bean mixture.
