Ingredients
  

Wet Ingredients
  • 3/4 cup olive oil  extra virgin
  • 3 tbsp butter at room temp
  • 1 1/2 cups applesauce
  • 1/2 cup honey raw
  • egg replacer for 3 eggs
Dry Ingredients
  • 2 cups flour whole wheat is best
  • 2 tsp ground cinnamon
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup raisins 

Instructions
 

Combine the Dry Ingredients

  • Combine all the dry ingredients, except the raisins, in a large bowl with a whisk (or your stand mixer with the whisk attachment). Combine the flour, cinnamon, baking soda, baking powder and salt.

Combine the Wet Ingredients

  • Next, add the wet ingredients. First, make the egg replacer according to the package.

  • Then, add the olive oil, the butter, the applesauce, the honey, and the egg replacer.

  • Stir with a baking spatula until well combined. 
  • Add the raisins. Stir again gently to fold them in.

Fill Muffin Tin

  • Place muffin liners in one muffin tin.
  • Fill each muffin liner 3/4 of the way.

Bake!

  • Bake at 325 degrees Farenheit for 25-28 minutes.
  • Remove from the oven, use a toothpick to check that your muffins are cooked all the way through. If the toothpick comes out clean, they are ready!
